Sweet Dinner Potato RollsIngredients
12 Martin's Dinner Potato Rolls
12 Eggs
1/4 Cup Milk
Salt and Pepper, to taste
1 Cup Cheddar Cheese, shredded
2 Green Onions, diced
1 Avocado, diced
6 Strips Bacon, cooked and crumbled
1 Cup Tomato, diced
Optional Toppings: Chopped Cilantro, Sour Cream, Salsa
Serves: 4-6
Directions
Step 1
Preheat oven to 375 degrees F.
Step 2
Bake rolls for a few minutes, until golden brown. Set aside and let cool slightly. Then, hollow out the tops of each roll to form bowls.
Step 3
Meanwhile, whisk together the eggs, milk and salt and pepper.
Step 4
Lightly coat a large pan with cooking spray and scramble the eggs.
Step 5
Once scrambled, add the cheese, bacon, avocado, tomato and green onions, gently folding them into the eggs.
Step 6
Divide the mixture among the bread bowls, and enjoy with the optional toppings!
