Avocado Toast with Poached Egg
1 Slice Martin’s 100% Whole Wheat Potato Bread, toasted
1 Large Egg
1 Tablespoon Chopped Parsley
1 Tablespoon Chopped Chives
Sriracha, to taste
Salt and pepper, to taste
Prepare Poached Egg: Bring 1 1/2 quarts of water to boil in a large pot. Crack egg into small bowl. Hold a greased ladle gently on top of boiling water and pour egg into ladle. Hold ladle scoop at top of boiling water, careful not to let water spill into ladle. Once the white of the egg is 75% cooked, spill egg into boiling water to completely cook the egg whites, about 15 seconds. Gently dip poached egg out of water with slotted spoon.
Prepare Avocado: Scoop out avocado into small bowl and add parsley, chives, and a pinch of salt. Smash with fork until combined.
Top toast with avocado mixture and spread evenly. Drizzle sriracha over avocado.
Add poached egg and top with salt and pepper, to taste.
