Brunch is such an underrated meal—with options spanning not just one, but two main meals of the day, the possibilities are plenty! And what’s not to love? Brunch is that late morning meal that lets you sleep in on a lazy weekend and stay in your pajamas for half of the day. Or maybe you prefer fancy brunches with family after Sunday morning church. Whatever your style, this wonderful meal is worth enjoying more often.
Brunch has the unique position of being acceptable for many different types of food—from breakfast-y French toast and eggs, to sweet treats like bread pudding, to more lunch or “tea time” inspired dishes like finger sandwiches and hors d’oeuvres.

Mini Coffee French Toast Stratas with Maple-Coffee Glaze
These mini indulgences are a coffee-lover’s dream! A perfectly sized serving of coffee-soaked Martin’s Potato Bread cubes (complete with cream and sugar!), plus a bit of lemon zest and vanilla flavoring for an added zing. To top it all off, these bread puddings are coated with a delightful maple-coffee glaze!

Mini Baked Egg Casseroles
These mini breakfast casseroles are a great way to customize your meal to each person’s preference! Start with a basic mixture of eggs, cubed Martin’s Butter Bread, milk, salt and pepper; then add in your favorite toppings to each individual ramekin. Some delicious options include cheddar or mozzarella cheese, broccoli florets, diced tomatoes, spinach, peppers, onions, or bacon. We made two variations: Broccoli & Cheddar and Tomato, Spinach, & Mozzarella.
