4 Large Eggs
4 Slices Martin’s Old-Fashioned Real Butter Bread
2 Tablespoons Butter, room temperature
Salt and Pepper, to taste
Fresh Herbs, such as dill, chives, or chervil (optional)

Directions
Step 1
Bring a pot of water to a boil.
Step 2
Carefully add eggs to boiling water and boil for 4-5 minutes. (This is for soft-boiled eggs; add more time if you desire “harder” eggs.)
Step 3
Transfer boiled eggs to a bowl of ice water to stop from cooking.
Step 4
Meanwhile, toast the bread; spread with softened butter.
Step 5
Peel the eggs, being careful not to break them open.
Step 6
Top each buttered toast with one soft-boiled egg. Use a butter knife to break them up and “smash” them around the toast slice. The yolk should be fairly runny.
Step 7
Finish off the smashed toasts with a dash of salt and pepper, along with chopped fresh herbs, if desired. Enjoy!
