Ingredients

tbsp butter

lb potatoes
1
cup milk
1/2
cup (1 stick) butter, melted
8
oz grated mozzarella
1
cup freshly grated Parmesan
Salt & Pepper (Try using SBQue's bourbon smoked S&P)

tbsp Martin's Sandwich Potato Rolls, broken into crumbs
Directions
  1. Preheat the oven to 400°.

  2. Coat a baking dish with 1 Tbsp butter and set aside.

  3. Cook the potatoes in a large pot of boiling salted water until they are very tender, about 15 minutes.

  4. Drain; return the potatoes to the same pot and mash well.

  5. Mix in the milk and melted butter.

  6. Mix in the mozzarella and 3/4 of the Parmesan.

  7. Season, to taste, with S&P.

  8. Transfer the potatoes to the prepared baking dish.

  9. Stir the bread crumbs and remaining Parmesan in a small bowl to blend.

  10. Sprinkle the bread crumb mixture over the mashed potatoes.

  11. Cover and chill.  *Note: Recipe can be prepared up to this point 6 hours ahead of time

  12. Bake, uncovered, until the topping is golden brown, about 20 minutes.
